Global science-based company Royal DSM has introduced a culture called DelvoCheese CT-500 Castellano for creating Spanish Castellano-type cheese.
The company claims that its culture has been specially developed to create the highly specific taste and texture of the Castellano-type.
It will also help makers to meet the growing demand for premium, authentic and artisan cheese.
DSM Food Specialties cheese ingredients and solutions business lead Evandro Oliveira de Souza said: “Around the world, consumers are keen to try new types and flavours of cheese, and we see a growing demand for cheeses that offer distinct flavours and regional stories.
“The DelvoCheese CT-500 Castellano is an exciting addition to DSM’s portfolio of cheese cultures which enable cheesemakers to tailor the taste and texture of their cheeses in many different directions, whether creating an authentic regional cheese or something new and unique.”
Castellano-type is described as having a fruity, nutty, sweet and tangy flavour that is grassy and pleasant. The taste turns more acidic after a ripening period of six months.
DelvoCheese CT-500 Castellano will join DSM’s comprehensive portfolio of continental cheese solutions, which includes cultures, coagulants, bulk starters, lipases and cheese-ripening solutions.
DSM noted that its cultures enable cheesemakers to craft quality Gouda, Maasdam, Havarti, French Raclette and Spanish Manchego.
