Dried Radicchio di Chioggia Igp is the latest product from the processing industry. At the last edition of "Chioggia capitale del radicchio" we talked to Marianna Berto, sales manager for Taflo in Pojana Maggiore (Vicenza) and licencee of the Aromy brand.
"This is a patented innovation that makes radicchio from Chioggia available all year round. We start with carefully selected and checked fresh radicchio to obtain a dried produce that is easy to use and maintains its nutritional value and organoleptic qualities unaltered. Aromy dried radicchio can be used to prepare risotto, flavour meat and cheeses and make preserves. It does not need to be rehydrated."
Azienda agricola Taflo specialises in the production and processing of traditional and organic vegetables and has an innovative range of natural dried products perfect to make various dishes.
Thanks to the drying technology used, Aromy products maintain the nutritional value and organoleptic qualities of the fresh produce unaltered.
"Radicchio and other dried vegetables can be used to prepare many recipes: risottos, soups, quiches, pasta and ravioli fillings, sauces, meat, fish, bread and other bakery products, as well as cheese, stews, salads, desserts, beer, etc. In addition to dried red radicchio, the range also includes Savoy cabbage, pumpkin, celery, carrots, green asparagus and kale."
Taflo also produces organic and healing vegetable infusions and teas: red radicchio and celery infusions and carrot, artichoke and asparagus teas.
On top of the Aromy range, Taflo produces GlobalGAP-certified onions to make onion essential oil, an ingredient used by the food industry in sauces, marinades and savoury snacks.
