According to councillor Margarita Medina, the Melon Project cooperative society of the town of Matamoros, in the state of Coahuila, will have new facilities to manually process jam, chamoy, tamarind, empanadas, sweets, liquor, and water will be processed. Nearly 120 producers have joined this new project, which aims to generate employment in the region through the manufacture and packaging of these products.
Medina announced that they will take full advantage of the Matamoros melon production. In fact, they will be able to process the melon that does not meet the quality standards demanded by commercial chains and that many times is thrown away, and could offer it at school breakfasts.
The councillor also said that they were carrying out tests to use the melon seeds and skin to make creative accessories such as necklaces or bracelets.
The producers will have the opportunity to offer the products they make in the Melon and Watermelon Fair, which will take place soon.
