Sustainable foods supplier Eat Just and sous vide foods specialist Cuisine Solutions, are teaming up to unveil the plant-based Just Egg in a new sous vide format.
French for “under vacuum,” sous vide is a cooking method in which food is vacuum-sealed and slow-cooked in water at precise temperatures.
Under the exclusive agreement, Cuisine Solutions will develop and produce Eat Just’s plant-based sous vide egg globally.
The collaboration follows Just Egg’s partnership with Emsland group last May to expand its protein processing capacity to help meet worldwide demand for its mung bean-based egg alternative.
Rolling out the new format
Just Egg Sous Vide will be the first launch, hitting US retail at the beginning of March in the freezer section.
The product comes in four flavors inspired by regional cuisines and whole plants.
Flavors include America (roasted potato, dill, chives, red bell pepper and black pepper); India (curry, broccoli, cauliflower, coconut milk and lemongrass); Japan (portobello mushrooms, yams, togarashi, soy and tamari); and Mexico (roasted poblanos, chipotle chile powder, black beans, corn and lime).

The Just Egg Sous Vide will be sold as a box of four that can be heated in a conventional oven, toaster oven or microwave.
Retail portfolio grows
The introduction of Just Egg Sous Vide adds a new offering to the already established Just Egg retail portfolio.
Just Egg’s ingredients use less water, land and emit less CO2 than animal sources, note the company.
The product is free from cholesterol and has as much protein or more protein as many animal proteins (9-13 g per serving, depending on the flavor). It is also non-GMO, egg-free, dairy-free and has no artificial flavors.
Current products available nationwide include a 12 oz pourable format for scrambles, omelets, quiches, stir-fries and a variety of baking applications and a fluffy, pre-baked folded format for on top of toast or inside a breakfast sandwich.
The path to egg-free
Founded in September 2018, the Just Egg made it to major retail shelves in the US by 2019.
At the same time, it was building its European network with agreements with German poultry business PHW Group and a manufacturing and distribution agreement with the Eurovo Group.
