Germany-based Loryma has developed a new concept that produces vegan mince by authentically reproducing the look and texture of meat-based dishes.
By ‘convincingly replicating’ the sensory characteristics of the original meat, the new vegan mince concept is aimed at addressing an increased appetite for meat alternatives.
The Loryma’s ingredients for the new vegan mince include textured wheat proteins combined with starch-based binding components to provide the necessary binding properties.
The starch-based binding components help in ensuring the characteristic ‘angel hair’ look of real mince. This enables the cooked product to replicate a realistic meat-like texture.
The wheat-based vegan minced meat is also claimed to offer comparable protein content, less fat, fewer saturated fatty acids, and additional dietary fibre.
Loryma said that the new vegan mince allows for customisation as it is based on odourless and tasteless raw materials.
In a press statement, the firm said: “The textured wheat proteins Lory Tex, and the functional wheat-based binding system Lory Bind, are both odourless and tasteless, allowing for individual seasoning and colouring with no undesirable aftertaste.
“The structure-giving texturate gives the vegan mince its fibrous consistency and a firm, typical bite.”
Loryma expects the vegan mince to serve the increasing demand for meat alternatives while offering a variety of uses for both manufacturers and consumers.
The wheat-based vegan minced meat, which gets easily separated when pan-frying, can also be used to prepare cold finger food.
