Gourmet Africa has unveiled a range of four cooking sauces inspired by different African regions.
Launched in September at the Speciality & Fine Food Fair held in London, the range includes:
- Bobotie Curry (South Africa Cape) – this mild and fragrant sauce calls for dried fruit, usually apricots, mild curry and turmeric, giving it a sweet and spicy flavour
- Durban Curry (South Africa) – this hot Southern Indian currys red colour comes from fiery dried chillies
- Cape Malay Curry (South Africa) – the sauce is a combination of sweet and savoury flavours, using sweet spices like cinnamon and ginger, dried fruit and savoury seasoning like garlic and onions
- Dora Wat (Ethiopia) – a medium to hot spicy stew prepared with chicken, vegetables and flavoured with spicy berbere paste made from chillies, garlic, ginger, fenugreek seeds, dried basil and black pepper, garnished with hardboiled eggs.
