WeissBioTech has launched a complete and refreshed portfolio of enzymes for winemaking. The Germany-based company’s portfolio consists of ready-to-use enzyme products that optimize the principal winemaking applications while fitting with any type of grape. 

The portfolio includes Natuzym Wine Aroma for white and rosé wine aroma and precursor release, Natuzym Wine Extrak for white, rosé and red wine maceration and Natuzym Wine Filtration for white and rosé wine clarification, batonnage and β-glucan split.

 

Natuzym Wine Flotation is also for white and rosé wine and Natuzym Wine Klar for white, rosé and red wine.

The company stresses how grapes are the main raw material in wine making processes and the production of wine vinegar. The process involves ethanolic fermentation of grapes or grape musts with yeast.

Natuzym enzyme products are used to increase the preliminary juice extraction and obtain more high-quality wine in winemaking. 

The enzymes facilitate the extraction of sugars, color and aroma, as well as ease the filtration of the mash.

In the manufacture of red wine, pectolytic (pectin degrading) enzymes enable clarification and improve color extraction.
