Bell Flavors & Fragrances has announced new smokeless smoke flavours, a natural alternative to traditional liquid smoke with variations ranging from mesquite to cherrywood. These natural smoke type flavours will, the company said, help elevate their respective individual flavour nuances that continue to grow in popularity.
Bell’s smokeless smoke type flavours are claimed to be advantageous as they can provide ingredient label benefits, are easily customised, and can facilitate a reduction in traditional food smoking time while maintaining the delicious savoury smoked flavour. Smokeless smoke variations such as smoke, applewood, cherrywood, pecan, hickory, and mesquite are being sought out as on-trend food flavuors resulting from classic food preservation methods.
Although smoke flavuors came into existence in the late 1800s, they are more commonly being used today in food productions wher typical smoky flavours would be expected, Bell notes – bacon, cheeses, jerky, and more.
