Botulism is a risk in canned and jarred low acid foods, which includes cheese sauce. The Clostridium botulinum spores can survive the canning process, especially if temperature controls aren’t applied, and then can produce the botulinum toxin under certain conditions. Other foods that carry a potential botulism risk include home canned products, and canned vegetables.
The symptoms of botulism food poisoning are definitive and unusual. They progress downward through the body in a parallel manner. Early symptoms include blurry and double vision, difficulty swallowing or speaking, dry mouth, facial weakness, and dropping eyelids. Later symptoms include trouble breathing, nausea, vomiting, and abdominal cramps. Anyone suffering from these symptoms must see a doctor immediately.
