Food ingredients supplier Arla Foods Ingredients is set to launch its new cream cheese manufacturing solution, Nutrilac CH-7694, which is said to help significantly shorten the duration of the cheese-making process from up to 20 hours to around 30 minutes.
Nutrilac CH-7694 is a new whey protein ingredient that has been developed at the company’s application centre in Buenos Aires, Argentina.
In addition to reducing the time required for the cream cheese manufacturing process, the whey protein ingredient is also said to increase yield, while delivering flavour and texture.

Arla Foods Ingredients dairy industry marketing manager Aparecido Silveira said: “Our new high-yield solution is a great way for cream cheese makers to cut costs and increase profits.
“It is particularly suitable for dairy companies looking to get into the category for the first time because it requires no extra investment in manufacturing plant, but it also has the potential to revolutionise processes for existing manufacturers of cream cheese.”
The new ingredient is also suitable for further processing into products such as cheesecakes and sushi.
The new whey solution is set to be displayed at the Food Ingredients South America event in Brazil later this month, along with a new solution named Nutrilac YO-5088, which can be used in the production of high-protein drinking yoghurt to deliver improved texture and mouthfeel throughout its shelf-life.
In addition, the company will also exhibit Nutrilac YO-4575, which is a low-pH, heat-stable protein ingredient that is intended for use in the creation of long-life yoghurts.
